Welcome to my cookbook, where im documenting monsteriousity i cook up. Every recipe is a living document that probably will change at some point. Some of these are stupid easy that they can barely be called a recipe but i want to tell you about it anyway.

RECIPE

CAKE
PREHEAT OVEN 350
1. whisk eggs until blended and foamy, add sugar and whisk on high for 8 minutes
2. in a seperate bowl whisk flour, baking powder and cinnamon together
3. once eggs are forming stiff peaks fold in flour mixture until there are no streaks
4. pour batter into two cake pans evenly, bake at 350 for 23-28 minutes, they will spring bake when poked in the center
5. remove from oven, use a knife along the edge to loosen cakes, flip and remove parchment paper. once completely cooled and slice each one in half (if you want 4 layers)

PLUM SAUCE
I did not measure any of these lol just add to taste, you'll want about two cups worth of sauce.
1. in a saucepan heat up chopped plums and just enough water to cover the bottom, medium heat until the water thickens then reduce to low
2. add in brown sugar and ginger
3. simmer and mash until it has a "chunky applesauce" consistency, cool down to at least room temp before using

FROSTING
1. blend room temp cream cheese and butter together
2. add vanilla extract, add powdered sugar in 1 cup intervals until its the right consistency

ASSEMBLE
1. place one layer of cake, pour roughly 1/2 cup of sauce on top
2. on what will be the underside of the next layer spread some frosting, place frosting side down to plum side of previous layer
3. repeat process until all layers are done.
4. frost the rest of the cake
5. I used edible flowers to cover up where I fucked up slicing the layers, this is optional.

NOTES


-this recipe yields thin layers of frosting, if you want thicker layers go with 2 packs of cream cheese, additional cups of powdered sugar and maybe a splash of milk if its too thick. Add more butter at your own risk imo.
-at 23 minutes I feel like I'm overcooking it but my oven runs hot. Will experiment with less time personally. Use your judgement about cooking time + watch them.
-What I wanted was to so a ginger syrup layer then put plum suace on top but the store didnt have fresh ginger for that. Will update when I get the chance to try it out.
-you can half the recipe and bake it in two 6" pans for about 21 minutes and its perfect. for the frosting just reduce the amount of cream cheese to one pack and a cup and a half of powdered sugar.
